This ketchup is both savory and sweet with a little spice too.
Makes about 3 cups
2 tablespoons vegetable oil
1 red onion, chopped
2 cloves garlic, chopped
1 peach, chopped
1 teaspoon grated ginger
1 teaspoon mustard powder
1 teaspoon salt
1/4 teaspoon red chili flakes
1 28 ounce can chopped tomatoes
3 tablespoons tomato paste
1/3 cup light brown sugar
1 tablespoon molasses
1/4 cup apple cider vinegar
- Heat the oil and sauté onion, garlic, peach and ginger until the onion is soft.
- Add the spices and mix well.
- Add the rest of the ingredients and let the ketchup simmer on low heat for 45 minutes. Stir now and again so it does not burn.
- Allow to cool and pour into a blender and blend until smooth.
- Pour into an airtight bottle and keep in the fridge for up to two weeks.
TIP:
Great on anything from a burger to, well yes anything you can put ketchup on.
