Orange juice and maple syrup combine to make this dish shine!

You will need:

 

4 large chicken thighs

1 large red onion, peeled and cut into wedges

4 whole head of garlic, top cut off

1/2 cup orange juice

1/2 cup chicken stock

4 tablespoons maple syrup (I like grade B)

salt and pepper

1 orange, cut into large pieces

Rice for serving.

  1. Preheat oven to 380F
  2. Place the chicken skin side up in an oven proof dish.
  3. Add red onions and garlic and pour over juice, stock and maple syrup.
  4. Sprinkle with salt and pepper.
  5. Roast in the oven until golden and done, about 30 min. (your kitchen will smell amazing!)
  6. Serve with chunks of orange over rice.

TIP:

I love Grade B maple syrup, I think the flavor is a little deeper and more complex than Grade A. Give it a try!
