Light and fresh with plenty of elegance. Sea bass is such an easy fish to prepare and the addition of lemon, asparagus, and capers on a nest of pasta brings it to a new level.
Serves 8
- Boil a large pot of salted water and add the pasta. Cook until al dente and drain.
- Use a vegetable peeler to make long, thin strips of asparagus.
- Place the pasta in a large bowl and add oil, lemon juice, capers, and asparagus.
- Season with salt and pepper.
- Keep warm.
- Melt the butter in the pan and cook the bass about 2 minutes on each side.
- Season with salt and pepper.
- Plate the pasta with the fish on top.
