Chicken & Waffles is the perfect holiday morning TREAT! If you're not familiar with the combination, trust me... give it a shot!

I can still remember when I first tasted fried chicken, waffles and honey together.
I mean, it was love at first bite! Sweet, salty, crunchy! What's not to love?! If you don't want to deep fry your chicken you can always grill it for almost the same taste. I like spicy and sweet together so I usually add some hot sauce to my plate of chicken and waffles too!

Serves 4

For the waffles:

2 eggs, separated

1/2 cup sugar

1 teaspoon vanilla extract

1 1/2 cup milk

1 cup butter, melted

2 cups all-purpose flour

3 teaspoons baking powder

pinch of salt

For the chicken:

4 small chicken breasts

3 eggs, beaten

2 cups all-purpose flour

2 tablespoons dried thyme

1 tablespoon salt

1/2 tablespoon pepper

vegetable oil for frying

  1. To make the waffles, start by beating egg yolks and sugar light and fluffy and add milk and butter, mix well.
  2. Add flour, baking powder and salt and mix until smooth.
  3. Whisk egg whites until sift peaks and fold into the batter.
  4. Heat your waffle maker and add 2 cups of the batter, cook until golden.
  5. Place on a wire rack.
  6. For the chicken, start by rinsing and patting the chicken dry with paper towels.
  7. Place the beaten eggs in a shallow bowl and mix flour and spices in another for breading.
  8. Dip the chicken in the flour, then eggs, then flour again.
  9. Heat the oil in a large pot about 5 inches high.
  10. The oil is hot enough when a piece of bread is dropped in and it turns golden.
  11. Fry the chicken two at a time about 8-10 minutes each.
  12. Let it rest on paper towels for 5 minutes.
  13. Cut the breasts in half lengthwise and place between two waffles.
  14. Serve with honey and hot sauce on the side!
