The name of this apple parfait is translated as “farmer girls dressed in veils.” Don't ask me what that has to do with layers of amazing, homemade apple compote, toasted spiced breadcrumbs, and sweet whipped cream, but it’s delicious.
Now is the time to go apple crazy—when they are at their best. When I go apple picking in fall, I always pick far too many. I usually turn my bounty
into apple compote that I can use all winter. This is a wonderful Norwegian recipe from my childhood that uses the apple compote.
2 pounds sweet apples, peeled, cored and cut into cubes
juice of 1/2 lemon
1/4 cup golden raisins
2 tablespoon rum 1/2 cup sugar
2 tablespoons unsalted butter
2 cups fresh bread crumbs
2 tablespoons sugar
1/2 teaspoon cinnamon
2 cups sweetened whipped cream
- For the compote, place apples in a large skillet.
- Add lemon juice, raisins, rum, and sugar.
- Bring to a boil and cook, stirring, until soft, about 10 minutes. Then remove from the heat and allow to cool.
- Heat the butter in a skillet, and add bread crumbs, sugar, and cinnamon. 5. Cook, stirring, until golden brown. Set aside to cool.
- To serve, spoon apple compote, bread crumbs, and cream in layers into 6 glasses.
- Chill a bit more if necessary to make sure all components are cold. Enjoy!
