This smoothie is basically gazpacho in a glass -- perfect made with wonderfully sweet heirloom tomatoes.

Serves 4

1 large ripe tomato



1 celery stalk



1/2 cucumber, remove the green skin



1/4 cantaloupe melon



juice go 1/2 lime



1/2 cup coconut water



ice



salt and pepper


  1. Cut all the vegetables in chunks and place in a blender.
  2. Add lime and coconut water and bland until very smooth.
  3. Pour into glasses filled with ice and serve with a little salt and pepper on top.
