This might be THE perfect side dish. It’s sweet, salty, crunchy, and spicy—it’s got it all.

Serves 4

1/4 watermelon, in cubes

8 oz feta cheese, crumbled

1/4 cup fresh basil leaves

3 tablespoons olive oil

juice from 1 lemon

1/4 cup roasted unsalted peanuts

salt, to taste

pinch of red chili flakes

  1. In a large bowl, mix watermelon, feta, and basil.
  2. Pour on oil and lemon juice.
  3. Sprinkle with peanuts, salt, and red chili flakes.
  4. Serve at room temperature.
