You’ve probably seen versions of baked feta all over the internet lately. The trend is so huge that it can be hard to purchase feta cheese these days! I’ve added my spin to the standard recipe by adding in some chickpeas. I’m also not the biggest fan of feta paired with pasta like many of the recipes call for, so I like to serve it as a standalone hot dish that can be spooned on crusty bread or crackers.

Serves 4 as a snack
2 pints grape tomatoes
6 garlic cloves, whole
1/2-1 red chili, thinly sliced
salt and pepper
1 15-ounce can chickpeas, drained
a few sprigs of fresh thyme
Serve with crusty bread or crackers
- Preheat oven to 400F.
- Place feta, tomatoes, garlic, chili, and olive oil in an oven-proof dish.
- Sprinkle with salt and pepper.
- Bake for 15 minutes.
- Remove from oven and add chickpeas and thyme.
- Bake for another 12 minutes.
- Remove from oven and preheat your broiler and broil the dish until the feta starts to get golden.
- .Remove from oven and serve. You can use a spoon and mix it all together or serve the full blocks of feta with the tomatoes and chickpeas on top.
